Château Fouquet is a separate property from Filliatreau that has been worked organically since the early 1990's. It is now certified biodynamic. The grapes are direct-pressed then half the juice gets fermented and aged in old barrels while the other half is fermented and aged on the lees in stainless steel. Sulfur additions are: 20mg per liter at press , 20mg at bottling.
