Meet the Chablis of Italy! Demeter certified biodynamic producer Giordano Lombardo (super rare in Gavi) picks whole clusters and presses gently for a delicate expression of Cortese. A short maceration on skins provided added phenolics and five months on lees gives a creamy mouthfeel. Very northern Italy with a steely, chalky vibe yet with elegant lemon, floral and nutty notes often seen in Chablis. Try with the local tart and soft Tomino cheese.
