This "Pet-Nat" follows the Ancestral Method, and is bottled without added sugar or yeast. Fermentation is paused mid-way for bottling, allowing the fermentation process to finish in the bottle with no disgorgement or dosage. Finally, the unique closure, a rope tied around the neck of the bottle is based on the old school method traditional to that region. The winery partners with a local non-profit that employs people with special needs to tie the ropes.
