60% Roussane, 25% Grenache Blanc & 15% Marsanne – a Grand Vin from the Languedoc. Winemaker Pierre Borie is close with Alphonse Mellot in Sancerre and makes his wines in a similar fashion. This wine is farmed organically and made with native yeasts. Macerated on skins for 24 hours prior to fermentation for exceptional texture. Aged for 11 months in large oak, providing for tremendous breadth. Minimal SO2 used only at bottling.
Waxy, lees-y and oh so vinous! Drinks like Châteauneuf-du-Pape Blanc but with bright finesse rather than oily richness. Stone fruits, marzipan and herbs. Unique balance of zesty and savory. Absolutely delicious.
