These Pinot Grigio grapes are hand-harvested in the Veneto region of northern Italy. Found high above sea level, the grapes benefit from well-drained, clay, volcanic rock, and mineral rich soils. The fruit is transferred directly from handpicking to the pneumatic press immediately followed by three weeks of cold fermentation. To preserve the fresh acidity, there is no barrel ageing, and the juice does not undergo malolactic fermentation.
