This wine is a single vineyard expression from the Fontanasanta vineyard. Nosiola is an ancient Trentino grape variety, once spread throughout the region and whose cultivation has since been restricted to the areas of Valle dei Laghi, Colline di Trento and Pressano.
The grapes are destemmed but not pressed: whole berries ferment spontaneously and age in clay amphorae for eight months. The wine is then finished in oak and acacia casks for two months prior to bottling. S02 is usually added only at bottling, between 20-35mg/l. In warm vintages with low PH, it may be added after malolactic fermentation.
