This bone-dry Cava offers flavors of ripe pear, brioche, apricot, nectarine, and a zesty minerality. Sustainably-grown grapes are sourced from 15 to 40-year-old dry-farmed vines planted entirely to indigenous grape varieties. Xarel-lo usually represents half the blend, Macabeu nearly half the blend, and Parellada a small proportion. The wine is aged for 18 months (twice the minimum for the DO) and disgorged to order, with a dosage of less than 0.5g/l. Vegan-friendly!
