The Cuvée Prestige Ollieux Romanis comes from selected plots between 40 and 100 years old. They are planted with a density of 3500 vines/ha for a yield of 35 hl/ha.
ELABORATION In native yeasts for the Syrah and the Mourvèdres, traditional for the other grape varieties. Fermentation for 12 to 18 days. Carignan vinified by carbonic maceration. The Cuvée Prestige Rouge is aged at 50% between 6 and 12 months in barrels of 1 to 5 wines and at 50% in stainless steel vats, wine kept at 15°C.
