This whiskey from Dublin’s Pearse Lyons Distillery is a unique four-cask blend of single malts and grain whiskies between four and ten years old. One malt is matured in first-fill ex-Bourbon barrels, while the second was finished in Port wine pipes. The grains were matured in sherry casks and “double-charred” casks. The nose has notes of sandalwood, cedar, toasted oak, butterscotch, and muted spices. The taste has a good spiciness with hints of clove, allspice, and crystallized ginger balanced by butterscotch and honey for a well-rounded and vibrant flavor. The long finish has touches of ginger snap cookies, malt, buttered popcorn, and honey. Very nice!
