This classic, dry Fino provides flavors of dried apple, green almond, citrus peel. It’s made entirely with Pedro Ximénez sourced from 20-30-year-old vines grown in albariza soils. It achieves its 15% alcohol content through natural ripeness, not fortification, and spends at least five years under flor to develop a wonderfully incisive complexity. This wine is excellent as a chilled apéritif.
