The red Domaine de Chevalier, the flagship of the Pessac-Leognan appellation, belongs to the elite of the great classified growth of Bordeaux.

The grapes are tripple sorted: 1st in the vines, 2nd on the complete bunch on the sorting table and 3rd by individual grapes on the sorting table. Vatting is done by gravity without pumping. Alcholic fermentation in stainless steel and coated steel temperature controlled vats. Barrel aged for 18 months

This offers a complex nose of sweet tobacco and stones, with red fruits such as plums, as well as a smoky note on the nose. Full and juicy, with a tobacco and berry character that turns almost tea like on the finish. This has medium tannins, and is just starting to come around. Still needs another two or three years to open, but this is already nice. Pull the cork after 2013. (Suckling)

The 2000 Domaine de Chevalier is deep in color. It has a precocious bouquet of black cherries, blueberry, red currant and violets, very well defined and focused; there is real panache here. The palate is medium-bodied, stocky and quite foursquare at the moment, with dry-ish tannins what you might call a "masculine" wine. Quite briny and marine-influenced, this exerts a firm grip and certainly would benefit from either decanting or further bottle age.
