A younger subspecies of Agave angustifolia from the Partida family, mature at 7 years – but with an additonal 3 years capón in the field before harvest. Rested for nearly 3 years in glass before bottling, this batch is light and herbaceous, with pronounced mint, cilantro and ginger on the nose and unctuous texture & minerality on the palate. Remarkably easy to drink.
