DESCRIPTION: Made using fully mature agave that that go through capon (castration) for 2 years to increase sweetness. Roasted in a rock oven with amarillo, white oak, and tepehuaje. Nose and palate of honeydew, chamomile, candied strawberry, and roasted parsnip with some minerality with leather, and white chocolate.
