This deliciously dry Cava offers flavors of yellow apple, biscuit, apricot, and citrus. Sustainably-grown grapes are sourced from 15 to 40-year-old dry-farmed vines planted entirely to indigenous grape varieties. Macabeu typically represents 45% of the blend, Xarel-lo 40%, and Parellada 15%. The wine is aged for 18 months (twice the minimum for the DO) and disgorged to order, with a dosage of less than 8 g/l. Vegan-friendly!
